- 545 grms Potatoes, cleaned and peeled
- 60 grms Kahurura(Pumpkin leaves), cleaned and trimmed
- 100 grms maize corn
- 1/2 tsp. salt
Boil the maize for approximately 20 minutes or until cooked. Drain the water and set aside.
Meanwhile bring some water to a boil in a small pan. Add about 1/4 tsp. of bicarbonate of soda to the boiling water and then add the pumpkin leaves and let boil for about 5 minutes. Shock in ice cold water or running tap water. Squeeze off excess water by cupping the leaves in both the palms of your clean hands and keep aside.
Boil the potatoes for about 20 minutes or until just tender. Drain off excess water and mash the potatoes finely while still very hot on low heat. Add the maize corn and the Pumpkin leaves plus salt and continue mashing in a medium heat until you get a smooth avocado green mash. Serve hot with protein of your choice.

So for you to get the exact measurements as for the ingredients you have to purchase a little extra(As Purchased Quantity APQ) depending on the after trim yield which varies from item to item e.g. in this particular recipe the potatoes were 700 grms to yield the 545 grms while i used 3 large pumpkin leaves and 1/3 of a medium size maize on the cob.
