Sukuma wiki (Kale)

  • 500grm fresh sukuma wiki,
  • 2 tablespoon salad oil
  • 1 small red bulb onion, cleaned
  • 2 to 3 ripe tomatoes, cleaned
  • 2 garlic cloves
  • Salt and pepper to taste


Step 1

Clean the Sukuma wiki well in cold water. Remove the fibrous stalk and leave the green rich leaf. Cut it into fine julienne slices and keep aside.

Step 2

Cut the clean onion into nice slices or cubes, crush the garlic cloves and then cut the tomatoes into small cubes.

Step 3

Place a pan on the heat and when hot pour in the oil. Add the onions and cook stirring for about 3 minutes add the garlic and cook stirring for another 1 minute before adding the tomatoes.

Step 4

Reduce the heat to medium and cook the tomatoes until they break into a thick paste before stirring in the Sukuma wiki. Season with Salt and pepper

Step 5

Cook for 3 to 5 minutes. Adjust seasoning before serving hot.
